The kitchen truck is a place where you can smelt a lot of different flavours, the main flavour is the smelt that hit you, the warm bread that come from the oven straight to our plate. When you make back and forth movement from the dining hall to the kitchen and the kitchen to the dining hall, you can feel the difference of the temperatures between the 2 spaces. Cooking in Odder højskole:
Therese was a chef 25 years ago, she worked in the restaurant industries for a long time. After that she open different restaurants as a self-employee. But unfortunately because of the financial crise, Therese has to sell her restaurants… After that she saw an opportunity to work in the kitchens of Odder, so she jumped on the opportunity and here is she! “It was the perfect timing to come here, I did everything in the restaurant business” so said Therese. In addition to that, Therese father also worked as a chef in a højskole at the time so it’s a bit of a family story. The højskole is another point of view for her in cooking.
Cooking, a passion:
For Therese, cooking is a really creative activity. You can choose how you want to dress it up, try new flavours, different types of textures,… There are always new thing that you can try in cooking !
Kitchen truck:
The kitchens of Odder are in construction for the moment, so Therese and her colleagues have to cook in a truck… “It’s a big challenge” so said Therese. They have what they need to cook properly but it limit them a bit also. Bringing everything from the kitchen to the dining hall is not always easy… But on the other hand, it is an opportunity for them to make more simple food and still in a nice way, they have to put a limit on themselves which is very interesting. The kitchen duty every week helps also a lot, together they create real teamwork because they work hands in hands to understand this new way of working. Therese is still looking forward to cooking in the new kitchens after all.
Quality of the food:
Therese said that the quality of the food is not affect because of the truck, thy keep the quality as good as possible. The thing that affect them is more the amount of different type of food that they can prepare.
Importance of the food:
In the kitchen of Odder, they try to be focus in the using of vegetables and less meat. They try to make sure that the students benefit from all the nutrition that they need because they eat all the food there. Therese said that it is important to be as organic as possible, but it has to make sense. Eating many different flavours is also one of there focus !
Food waste:
They try to keep food waste down, and its work really well ! In the preparation of food there is no food waste so that’s a really good. With the food waste of the students it is sometimes a bit more complicate, because some of them take more at the buffet than they need… “But generally food waste is not a big problem” so said Therese. A good point is that finally the food that people don’t eat is given to the animals !
